300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Making the Syrup: Combine all the ingredients into a pot, heat until it reaches a light boil, stirring to dissolve. Then, turn off the stove and leave to cool fully. Transfer into an sealable bottle, seal and refrigerate it in the fridge, it can be stored for around a month.

Preparing the Cocktail Base: Mix every liquids into a big jug, leave to sit for one hour, then filter it best through muslin, to ensure it's perfectly clear.

To serve: Add 85ml of the batch mix into your cocktail shaker packed with ice, and agitate carefully for one minute until cold. Strain to a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch using a light spray of mandarin oil over the drink.
